Apple Crumb Cheesecake


Apple crumb is usually associated with pies.  If you take away the pie, keep the crumbs and add some cream cheese you get yourself one remarkable Apple Crumb Cheesecake recipe.   It’s simple to bake and even more fun to eat.

But before dessert, you've got to have your main course.  A great starter is prime rib roasted.  It's tender and juicy and a great starter before you savor your cheesecake.

  • The Ingredients
  • The Crust
  • 1 1/2 Graham Crackers crumbs
  • 1/2 cup Butter, melted
  • 2 tablespoons of light brown Sugar
  • The Filling
  • 3 8 ounce packages of Cream Cheese softened
  • 3 Eggs
  • 1/2 of Butter
  • 3/4 cup of Sugar
  • 1 teaspoons Vanilla Extract
  • 1 teaspoon of Cornstarch
  • 1/2 cup Whipped Cream
  • The Crumbs
  • 3/4 cup flour
  • 1/2 cup light brown sugar
  • 1/2 cup softened butter
  • 1 teaspoon of cinnamon

The Directions

Combine Graham Crackers crumbs, melted butter and light brown sugar in medium size bowl.  Press into the bottom and slightly up the sides of a 9" springform pan and place in refrigerator to harden.

Preheat Oven 350°F 15 to 30 minutes before baking.  Slowly blend softened cream cheese into a large mixing bowl.  Next add butter and cornstarch and continue to mix.  Slowly add sugar and continue to mix well.  Beat in eggs, one at a time.  Add Whipped Cream and Vanilla Extract and continue to mix until well blended.  Pour mixture in Crust.

For the crumbs, combine in a small bowl the flour, brown sugar, softened butter and cinnamon.  Mix until crumbly.  Sprinkle over cheesecake mixture and cover completely. Bake for 45 minutes to an 1 hour.  Sides should look somewhat dry when done.  Turn off and crack the oven door.  Leave in for 15 more minutes.  Let cool on rack.

Chill in refrigerator for 2-3 hours or until the cheesecake has set.  Enjoy your Apple Crumb Cheesecake.
