Banana Cheesecake Recipe

On a scale from 1 to 10, this banana cheesecake recipe this is a 9.   I would have gave it a 10, but even cheesecakes aren't perfect.   Close, but not just yet.

  • The Ingredients
  • 45 Vanilla Wafers
  • 1/4 pound (1 Stick) of melted Butter
  • 1/4 Cup of Light Brown Sugar
  • 1 Teaspoon Cinnamon Extract
  • 3 (8 ounce) bars of softened Cream Cheese
  • 1/2 Cup of Light Brown Sugar
  • 1/2 Cup of White Sugar
  • 1 Tablespoon of Cornstarch
  • 2 Tablespons of Jamaican Rum
  • 1 Teaspoon of Coconut Extract
  • 3 Eggs
  • 2 Cups of thinly sliced Bananas
  • 4 ounce White Chocolate

The Directions

For the Crust: Preheat Oven at 350°F.  Make your Vanilla wafers cookie crumbs by using a food processor or simply place wafers in a plastic bag and crush using a rolling pin.  Mix Vanilla Wafers, melted butter, brown sugar and cinnamon extract in a bowl.  Spread in the bottom of a 10" springform pan and up 1 1/2 inch on the side.  Bake in oven for 10 minutes.  Remove from oven and place to the side to cool. 

For the Filling: Preheat Oven at 350°F.  Melt white chocolate in double boiler over low heat and stir.  Remove double boiler from heat and place to the side.  Prepare sliced bananas.  First slice bananas in quarter and then use a egg slicer to finsh the slicing. 

Using an electric mixer blend cream cheese on low speed in a mixing bowl.   Use spatula to scrape sides and paddle of mixer.  Add in the 1/2 cup of white sugar slowly, and continue to beat until creamy.  Add in the 1/2 cup of light brown sugar slowly, and continue to beat until creamy.  Add in cornstarch, Jamaican Rum and Coconut extract and mix until blended.  Add in eggs one at a time and continue to mix a lowest speed until eggs are incorporated in the batter.  Fold in sliced bananas.  Fold in white chocolate and mix lightly, just enough to mix chocolate throughout batter. 

Pour the mixture into your crust and use offset spatula to help scoop out the batter.  Bake for 1 hour or until the top is slightly brown. 

Remove from heat and let cool.  Place in the refrigerator and allow to set before removing sides.  Serve and enjoy your Banana Cheesecake.
