Chocolate Cheesecake Recipes


If chocolate is good for the soul, then adding it to a cheesecake must be get you into heaven.  No wonder chocolate cheesecake recipes are so popular.

Since chocolate comes in wide varieties it has enough different taste to suit even the most discerning chocolate connoisseur.  You've got milk chocolate, white chocolate and dark chocolate.  You've also got sweet chocolate, semi-sweet chocolate, bittersweet chocolate and even unsweetened chocolate.

So that's the reason for so many chocolate cheesecake recipes.

The key to using chocolate in cheesecake is the double boiler .  If you use a single boiler, the chocolate will scorch and loose flavor. 

To melt the chocolate , simply fill the bottom boiler with water and heat at a low termperature.  Please don't let the water boil.

Before placing the chocolate into the top boiler, chop the chocolate into small pieces and then place them in the top boiler.  Don't cover the boiler either. 

When most of chocolate starts to look shiny, stir until it becomes smooth.  When you've finished, turn off heat and place to the side.

If you don't own a double boiler simply improvise with a saucepan and bowl.  They work just fine together.
