Chocolate Mousse Cheesecake Recipe


What do you get when you add eggs, cream and chocolate together?  Chocolate Mousse of course.  Add that together with cream cheese, and now you get a delectable Chocolate Mousse Cheesecake Recipe.

  • 1 cup chocolate cookie crumbs
  • 1/4 cup melted butter
  • The Filling
  • 24 ounce cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 8 ounce semi sweet chocolate
  • 2 tablespoon heavy cream
  • 1 cup sour cream
  • 1 teaspoon instant coffee powder dissolved in 1/4 cup hot water
  • 1/4 cup cognac
  • 2 teaspoon vanilla

Directions

Combine the cookie crumbs and butter and mix.  Press the cookie crumb- butter mixture into the bottom of an 8 inch springform pan.  A little oil on your fingers helps to keep the crust from sticking to your fingers.  Preheat oven to 375° degree F.

Next, beat the cream cheese until smooth.  Add the sugar and beat until light and fluffy.  Beat in eggs, one at a time, beating well after each addition.  Melt the chocolate with the cream in a double boiler, cool.  Add the chocolate mixture to the cream cheese mixture and blend well.  Mix in the sour cream, coffee, cognac and vanilla and blend well--- do not overbeat.

Pour into pan.  Bake in the preheated 375° degree oven for about 45 minutes or until the sides are slightly puffy.  The center will still be soft, but it will set as it cools.
