Any citrus fruit is great for cheesecake recipes. Many recipes use lemon, lime and orange, but tangerines and grapefruits too, can be used to make a wonderful cheesecake.
Since citrus can be bought year round, there is no need for bottle juices. Most recipes call for no more than two tablespoons of the juice-- three for a more intense flavor. You can get that amount from one piece of fruit.
If you plan to add orange segments to a cheesecake mix, the smaller the variety of orange the better. Because of their small sizes tangerines or Mandarins are ideal candidate. An added plus is that many are seedless .
To prepare, simply peal them and strip away the skin surrounding each segment. If you're in a hurry, use segemts from a can. Choose cans that have light syrup or packed only in jucices if you can find them.
