New York City Cheesecake


New York City Cheesecake is the pedigree of modern-style cheesecakes.  It’s awarding winning taste has pleased New Yorkers since Arnold Reuben Jr. first introduced it in the 1920’s.  So try out this New York City Cheesecake recipe and you’ll see why New Yorkers love their cheesecake.

  • The Ingredients
  • 1 1/2 cups commercial graham cracker crumbs
  • 1 Teaspoon cinnamon
  • 5 Tablespoon butter
  • 1/4 cup sugar
  • 5 8-ounce bars softened cream cheese
  • 2 Tablespoon of starch
  • 1 Tablespoon confectioners’ sugar
  • 1 1/2 cups sugar
  • 4 drops of lemon extract
  • 1/2 Teaspoon orange liqueur
  • 3/4 Teaspoon vanilla
  • 2 egg yolks at room temperature
  • 3/4 cup heavy whipping cream
  • 5 eggs at room temperature

Directions

Preheat oven to 400°F.  For the crust, heavily coat 10-inch spring form pan with cooking spray.  Mix graham cracker crumbs, butter, cinnamon and 1/4 cup of sugar until well blended.   Pour into pan.   With hands, spread evenly across the bottom and pat down firmly. 

For the filling, place starch, confectioners's sugar, sugar, orange liqueur in large mixing bowl and mix well.  Add cream cheese one bar at a time and mix throughly.  Add heavy whipping cream and mix.  Add 2 yolks, vanilla and lemon extract then beat again.  Add eggs one at a time, beating well. 

Pour into prepared pan.  Batter will fill pan.  Bake for 10 minutes.  Top will be golden.  Lower oven temperature to 200°F and bake for 35 to 45 minutes or until top browns or feels bouncy to the touch. 

Cool to room temperature.  Serve your New York City Cheesecake immediately or cover and refrigerate.
