Strawberry Glazed Cheesecake


Strawberries are one the most beautiful and sweetest fruits you can ever eat.  Strawberries have symbolically be associated with lovers.  So in that vein, I’m sure that special someone in your life would enjoy this Strawberry Glazed Cheesecake. 

Plus my family and friends always love when I bake this one.  And, unfortunately, I never have any leftovers.  Oh Well.

  • Strawberry Glazed Cheesecake
  • The Ingredients
  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons of melted butter
  • 2 packages of 8 oz softened cream cheese
  • 3/4 cup sugar
  • 2 teaspoons grated lemon peel
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup of cold water
  • 1 1/2 cup of fresh of mashed strawberries


Directions

Preheat Oven at 350°F.  To prepare the crust, in a medium-sized bowl stir together the graham cracker crumbs and 2 tablespoons of sugar.  Mix in melted butter and press into a 9 inch springform pan.  Bake in a 350°F oven for 8 to 10 minutes. Let Cool.

For Filling: Preheat Oven at 350°F.  Beat softened cream cheese in a large mixing bowl.  Gradually add in sugar, beating until fluffy.  Add in grated lemon peel and vanilla extract.  Beat in eggs, one at a time. 

Pour into the shell and bake for about 1 hour, or until the center is set and slightly brown.    Cool then spread with the strawberry glaze.  Chill for 2-3 hours.

Strawberry Glaze: Mix cornstarch and cold water in a glass.  Pour mixture into a sauce pan and mix with the sugar over medium heat. Stir in mashed strawberries.  Stir constantly, until the mixture thickens and boils for about 1 minute.  Cool thoroughly before spreading over the cheesecake.  Spread glaze and enjoy your Strawberry Glazed Cheesecake.
